Finalizing dining plans for a trip to Quebec City in July

Thanks to help from many informative posts, I have been formulating our dining itinerary for a trip to QC in July.
Dinner reservations we have made so far:
Le Saint Amour
Le Patriarche

We also have made reservations for breakfast at Lapin Saute.

Here are my questions:

We have one more dinner reservation to make. Trying to decide between Cafe du Clocher Penche, Cafe Bistro du cap, Cafe le hobbit. Is one of these far better than the others for dinner?

Also we are not making reservations for the night that we arrive, in case our plane is delayed. Are any of these places easier to get in without a reservation?

I realize these restaurants also serve lunch. The summer music festival is going on then, so I would imagine that the city will be fairly crowded. Will we have problems getting into restaurants for lunch without reservations? If so, how far ahead do I need to make them?

It's a good thing we'll be doing a lot of walking on this vacation, because the restaurants look fantastic.
