Enoki mushrooms

I've been infatuated with enokis since the first time I saw them at an Alpha Beta in the late '70s, but don't really have a perfect way to cook and showcase them. I usually section them up and throw them in a hot skillet with a little oil or butter and a touch of salt, and eat them with chopsticks. What do other people do with them that doesn't destroy their natural gorgeousness?
