Looking for easy potluck suggestions to feed 100-150 people

Hi there :)

I'm hoping someone here might have some good suggestions :) My husband just informed me that his boss is requiring all the managers to participate in a potluck for all the staff! I personally do not agree with this being a 'requirement' but that's besides the point...lol! There are approximately 100-150 staff and we are guessing 10-15 managers that will be in the office to participate. I've done a small amoutn of catering in my past and know that's a whole lotta food that a small amount of people will need to prepare! And it's on a Wednesday to boot and I work full time! Not sure how I am going to pull this off but was hoping someone might have a somewhat easy suggestion on what I can make. To make matters worse, while we have a full size fridge, we only have one and we have a family so I won't have a ton of room to store prepared food, thus limiting what I can prep the night before. My husband leaves for work at 6am and I leave at 7am, which young child in tow, so I'm hoping I don't have to wake up at 4am to get this done! LOL! So far, the only things I can think of is sweet and sour meatballs that can be done in a crockpot or a HUGE Quinoa or pasta salad. I'd love to hear of any other somewhat easy suggestions.
