dry aging prime rib

toteshungry | Dec 8, 201507:40 PM     9

HELP! I asked someone to get me a 4 rib rack so I can dry age it for Xmas dinner, but instead she got 2 2 rib racks. It's a long story so I won't bore you with the details. Anyways, can I tie the 2 racks together and then start the dry aging process? I really don't want to dry age 2 separate racks because there will be so much waste having to trim off the ends. I also don't want to cook 2 separate racks. Someone please help!!!! :*(
