downtown dc / metro-friendly restaurants that accommodate food allergies

This is kind of a tough request, but I have an acquaintance who is coming to town for a four-day conference in the Gallery Place/Chinatown area in a couple of weeks. She has just let me know that she has sensitivities to wheat, soy, dairy, beef, and chicken and would prefer to avoid these things. I was all set to recommend a number of lunch places for her, but now I'm in a bit of a quandary. I'm luckily not allergic to anything, so I have never had to work around this before. Cost is an issue for her and she won't have a car and has never been to DC before. I'm thinking Asian/rice/rice noodles...??? This would be for budget-friendly lunch places within walking distance of Gallery Place and for dinner places there - or with easy Metro access. Any thoughts? Thanks very much!
