The Mexican brownie recipe I have is for an 9" square pan. Can I just double it and bake in a 13x9 pan? I know the brownies will be thicker that way. I could also bake them in a 17x11 rimmed baking sheet so they will be thinner, but I can cut them larger.
I know doubling ingredients in baking doesn't always work, so any help is greatly appreciated. I'd prefer to not make 5 batches in my 9" pan if I don't have to!! :)
