Dinner party dilemma: Perigee, George, Splendido

Help! I posted back in January about venue recommendations for my company's year-end bash and received lots of helpful suggestions. So I've finally gotten around to visiting and calling around. Many restaurants do not have private rooms to accommodate a party of 30. But the three restaurants I've narrowed it down to can accommodate us. Here's my dilemma:

- Perigee: I can book the entire restaurant, and the dinner would be the same experience as on "regular" evenings -- about 4 different multi-course tasting menus, geared toward the preferences of the diners. Drawback -- fairly limited wine list... and this is a group of wine drinkers.

- Splendido: I can book their private room (not the cellar, too small). And they have a great wine list and sommelier. Drawback: they would limit us to a set menu (perhaps two app choices and three main choices, etc.).

- George: I can book their soon-to-be-built private room. They also have a great wine list and sommelier. Drawback: they would limit us to a single set menu for the entire party.

My choice going in was Splendido. But I really don't like the idea of a set menu, as I think it diminishes the overall experience of a restaurant (though I certainly appreciate the reasoning behind it from the restaurants' perspective).

So I'm leaning towards Perigee and perhaps working with them to bring in some special wines for us.

Any thoughts or recommendations from the board?
