DB bistro-great tea, poor prep

When I was at DB bistro, I ordered the oolong tea(from Nang Tou) after a decent meal. The tea came in a metal teapot, the waiter who brought it starts to pour immediately, to my horror. It wasn't even near ready. I had to pour it back to the pot(by the way, wrong, very wrong pot for this tea)at which point I realized that the water was not very hot, not nearly hot enough for this tea. At which point I also smelled the tea, wonderful! just not yet steeped for the maximum mouth taste. If only whoever had the smarts to select this tea had also followed through with the preparation of this tea....This tea just isn't for use with a metal mesh strainer, luke warm water, and metal teapot. What a waste!
