Cupcake storage

vf | Apr 19, 2006 12:59 PM

I'm on a big cupcake baking kick and was starting to get confused by the various reports on storage methods.

When I get cupcakes at a bakery, they always say, store at room temp, as putting in the fridge will make the cupcake dry.

In reading around websites and google searches, I've read that it's recommended that you put frosting in the fridge and to freeze the cupcakes.

What is everyone's experience with this? I assume it's the same with layer cakes. I usually serve cupcakes on the following day or always within a day or two. In the winter time, my apt is so cold, I figured it was fine leaving them out either way, but now it's getting warmer, I think it's a bit more dangerous to leave stuff out.

I want my cupcakes to taste good, but at the same time, don't want people to get sick from a cupcake gone bad!

Thanks! (my most recent cupcake pic below!)
