How to critique beef rendang?

I know there are two main types of beef rendang, dried and wet... but with so many different versions of beef rendang (e.g. different rendang from different regions/countries) and different restaurants in Vancouver doing different style of rendang(e.g. Tropika, Banana leaf, Hawker's Delight), how do you critique beef rendang?
