I went to a Chinese Buffet on father's day, because that is what my dad wanted to do. The best dish I tasted there, by far, was a crispy peanut chicken. It seemed to be a breaded boneless chicken thigh. Maybe panko bread crumbs and peanuts? Then a light and slighty sweet and a little bit sticky peanut sauce type glaze. The glaze or sauce was not heavy at all and didn't bother the crunch of the chicken. It was moist and juicy and I liked the flavor. I don't eat a lot of meat, because
I cannot swallow it, and I was able to eat this, so if anyone knows how I can recreate this dish, I would be gratefull. It was a restaurant in Montoursville PA.
