Low country boil

I am not sure if this is better suited to Home Cooking or here, because technically I am not seeking recipes.

Some friends and I are doing a low country boil in a few weeks in my new turkey fryer. Typically, the only ingredients in a boil when I do one (I have done about a handful over the years) are:

crab boil (the mesh bag with various spices)
new potatoes (halved if too large)
Shrimp (unpealed)
Andouille sausage (one inch chunks)
Corn (halved)

Sometimes I might add onions. Recently I was at a crawfish boil that incorporated mushrooms. I might toss in some of those and thought about getting 25 lbs or so of live crawfish to mix up the concoction.

Is that all you do when making one? I thought maybe a side would work, but I do not want to vary too much unless it's just dirty rice and beans. Maybe something else. Thoughts?
