I haven't seen this mentioned much on this site, but it's one of my old standard favourites. Usually it's the traditional corned silverside, steamed cabbage, mashed potato and white sauce. I have a rather choice lump to cook up tonight, and who else to consult, but the hounds?? I'd be interested in any opinions on boiling medium (I usually use malt vinegar, bay leaves, clove studded onion, carrots and a dessertspoon of brown sugar in my water). Any other favourite ways here? Different accompaniments? Appreciate your thoughts. Cheers.
