Cooking with wine for an Induction-phase Atkins dieter?

Help! A couple are coming over for dinner soon, and one of them has just started Atkins.

I don't know much about this diet, so I checked the "Induction Phase - Acceptable Foods" section of the Atkins website, but there is one thing that I'm still not sure of, i.e., is it okay to cook with wine? Would the alcohol cook off enough that the carbs would disapear? (I understand that the consumption of alcohol is prohibited during the Induction phase.) I wouldn't want to be responsible for ruining my guest's quest for lipolysis/ketosis...
