Cookie covered heesecake ball idea (easy treats)

I will be working out of town soon and wanted to make a quick treat for the other eight guys I will be working with. I'm staying in a suite hotel so will have a small kitchen. My mom, who makes lots of cookies and such suggested the "quick turtles" one makes with pretzels, Rolo candies and pecans or walnuts.

While looking for something else I read about Kraft cheesecake filling. I had a flash of an idea. Could I make little balls of that and roll them in crushed chocolate wafers? Would they have to stay frozen or well chilled? I found cheesecake pop recipes where a cream cheese mixture is covered with melted chocolate chips (sometimes mixed with paraffin or something), but no cookie-covered balls.
