Spotted this recipe in the 11-30-17 St. Paul Pioneer Press and it does indeed look really good. Has anyone made this (or a very similar cookie)? If so, what is your verdict? Thanks in advance.
A CAPITOL ENTERTAINER
My mother-in-law (now deceased) used to send a huge tray of a sweet variety of cookies to our home. In the fall, she would bake a generous amount of “out-of-this-world” apple slices for us to enjoy. She was an excellent cook with a special touch in entertaining for special holidays. She worked full time as the secretary to the Minnesota Department of Administration for over 40 years as a single mother after her husband died. She loved her job at the Capitol and her grandson referred to the building as “gramma’s castle.” This is a very easy cookie to make, but truly delicious. — Fran Lindstrom
RUTH M.C. LINDSTROM’S REALLY GOOD COOKIES
1 cup butter
1 cup dark brown sugar
2 cups all-purpose flour
2 teaspoons vanilla
1 egg yolk
Granulated sugar for dipping cookies
Preheat oven to 350 degrees.
Mix together first five ingredients. Roll into walnut-sized balls and dip into granulated sugar. Top with unbroken pecan half. Bake for about 10 minutes.
