Im working with limited gear here. I've got a ton of chicken breasts and no oven which I how I'd usually cook them. Ive got the aforementioned hot plate and an all clad Stainless Steel pan. I don't have a knife suitable to butterfly the chicken or utensil to flatten them out. The only fat to cook with I have is EVOO. and I really don't want to smoke up the place. Can I achieve decent results with this? Do I need oil in the pan to keep the chicken from sticking if I have the pan hot enough?
they are all pretty thick too.
