Condensed cream of mushroom soup

I went to an above average 'meat and three' restaurant this weekend and had a wonderful turnip green "casserole". Since they had a cookbook there for the restaurant, I checked out the recipe. It was basically three pounds of turnip greens, a can of condensed cream of mushroom soup, two eggs, and maybe some onion, stewed, then baked.

I'm totally hooked on this stuff (as I am on my grandmother's "chicken divine" recipe, chicken, rice, broccoli, cream of mushroom soup, cheese)but the food snob in me wants to find a substitute for the canned soup.

anyone have any suggestions? commiserations? other examples of the supreme utility of the canned mushroom soup?
