Need Company Dinner Menu Ideas (Vegetarian)

I'm starting to plan a company dinner at my house (6 or 7 people). I have an employee who is a vegetarian, so I will be doing the entire evening vegetarian. I'm sort of thinking of doing a Chinese-ish dinner with a few stir-fry dishes served banquet style, so that (hopefully) everyone can find things they like. To further complicate the menu planning we have a gluten free house.

It doesn't need to be strictly Chinese nor does it need to be authentic (whatever that means). I'm thinking of maybe doing several basic vegetable stir frys and stir fried rice with tofu. I'm aware of the limitations of my stove though, so I'm thinking it would be better to have some vegetable dishes that aren't stir fry, especially if they can be prepared first and held in the oven or something.

Any suggestions for menu items and/or advice in general?
