Cold fava bean appetizer

I just bought 4 pounds of fava beans (which will weigh considerably less once I shell, blanch and peel them).

After they are blanched and peeled, I want to serve them as some sort of cold appetizer (it's going to be hot day in NYC!). I'm open to making some sort of salad with olive oil, lemon juice and adding some combination of cured meat or cheese or herb or additional veggie, but I'm drawing a blank on exactly what flavor combinations to employ.

I'm also open to mashing or pureéing them into some sort of vaguely Mediterranean dip/spread/bruschetta topping.

What would you chowhounds suggest?
