Citrus, avocado, and fennel salad

We had this Cal-Mediterranean salad for dinner last night and thought I'd throw it out here. It's a very balanced tasting salad, with the creamy richness of avocado, sweet-tangy citrus, crunchy fennel, and meaty-salty punch of olives. I sprinkled a bit of fennel pollen over top for its haunting licorice flavor. Other greens (arugula, watercress) are great too.

1 head butter lettuce
2 blood oranges (cut off peel & pith, slice or cut into sections)
1 medium grapefruit (cut off peel & pith, slice or cut into sections)
2 small fennel bulbs (thinly slice)
2 hass avocados (slice)
1 small red onion or shallot (slice)
handful of olives
1/2 t fennel pollen (optional)

vinaigrette:
citrus juice drippings from slicing up fruit
1 T orange blossom or avocado honey
1 t dijon mustard
1/4 c apple cider or red wine vinegar
1 c olive oil
