After reading several recs for "The Modern Art of Chinese Cooking" on this board, I ordered up a copy and dove into it. For my first meal, I made spicy stir-fried scallops with orange peel, Hunan eggplant with ground pork, and a hot and sour soup which was based more on one from The Food Network. The scallops were a big hit, and I strongly encourage anyone who has not tasted a fresh water chestnut to get out and buy some right now!
