A few years ago, we did a road trip in California. We ate many good things on that holiday, but the meal that really sticks in my mind is a Mexican dinner we had in Bakersfield, on the recommendation of the receptionist at the motel where we spent the night.
This Mexican joint didn't look like much from the outside, but the food was GREAT. The thing I liked the most was chili verde - it was absolutely delicious. Being a chowhounder, I asked for the recipe, but they wouldn't give it to me. :-(
We don't have many Mexican restaurants in England so I haven't had the chance to eat it again. Nor have I found a recipe for this fantastic dish. According to the waitress, the main ingredients were pork, celery, oregano and tomatillos (not widely available in the UK).
Now apparently one of my local shops, which is Colombian, stocks tomatillos. So I thought I'd have a go at making chili verde. However, I can't seem to find a recipe - can anyone help?
