Chicago Hound w/2 days in Vegas in Oct.

I have made the following reservations for a Sat & Sunday Stay:

-Saturday Lunch: Nobu
-Sat Night Dinner: Fiamma
-Sunday Lunch: Delmonico's
-Sunday Dinner: Valentino

I'm trying to find good meals and the quality of the food to be exceptional if I'm paying exceptional $$.

I'm seeing O Saturday night with my sister-in-law we both like Italian, Sushi, pretty much anything as long as it's delicious.

Should I be changing things around? I have typically enjoyed the Emeril's chains previously and when I'm in Chicago I like Roy's, Topolobombo, Zia's Traitorria, and good ole Happy Chef in New Chinatown. I'm sad to hear 808 in Vegas isn't very good compared to it's original location, I had my wedding reception at A Pacific Cafe in Kauai and was torn between that locations Alan Wong's in Honolulu or Slanted Door in San Francisco. Please let me know if I should checkout another location like Rosemary's or anything in the Wynn hotel. The last time I was in vegas we ate at the Bellagio dinner buffet and Emeril's Fish House and were happy with both but just looking to try something new.
