I'm trying to recreate what I understand is a fairly classic southern caramel cake that a local bakery makes. It's a basic yellow layer cake with what appears to be a cooked caramel frosting - it has the texture of buttercream but a very pronounced caramel flavor. I found a recipe on a southern cooking website that seemed promising. The cake came out fine - a little sweet for my taste, but I have other yellow cake recipes that I know and like - but the frosting was a disaster. I thought I did everything correctly, using the candy thermometer and all, but the caramel was grainy and never stiffened up enough to be beaten into a spreadable consistency. And I beat it along time, chilled it and beat it some more, begged and pleaded . . . Does anyone have another caramel frosting recipe that I can try? Thanks.
