Cajun boudin from Taylor's Sausage

Hershey Bomar | Jan 3, 2006 12:37 PM

Last summer I drove to Louisiana and got hooked on boudin. I tried ordering it online but it tasted like it had been left out in the rain.
I finally made it to Taylor's in Oakland. They have hot and mild boudin. I chose the hot. An old man from Louisiana was buying boudin the same time, which made feel good. But the Asian butcher didn’t like answering my questions and didn’t seem to know how most Cajun’s eat boudin. He even seemed annoyed when I asked if they heat it up there. Most Cajun meat markets do.
However, the boudin which I steamed at home was pretty good. It was pretty mild, and was missing the standard funky pork taste of real boudin but for this far West this boudin rocks!
