i'm so fed up with all the so called chinese restaurants in this damned london town that i am going to learn to cook chinese myself.
i'm guessing the big deal here is buying a wok; what should i look for? i remember watching half asleep in my college days a program devoted to wok making - how the iron has to be properly hammered, and how you need all the edges and furrows in the steel that only a hand hammered wok can give etc.
true? false? brands to look out for? i guess i'll find suggestions for the best cook books on the thread below, but if anyone wants to chime in with specific london information about where i can purchase the best apparatus etc. please let me know.
