We just had our pig butchered and now have a freezer full of fresh pork. This is new to me so I have a lot of questions dealing with various cuts. I am going to make separate posts for the various topics. For today I want to find some ideas/recipes for slices of Fresh "ham". This is not cured ham steaks, it is fresh pork. Based on what I have read, it is a tough cut of meat and often braised. It can be used like pork "cutlets" and pounded thin into scaloppini.
The locals around here (rural south) just say fry it up for breakfast, but I'm not fond of shoe leather.
