Pursuant to the thread on fast food recipes below, one thing I'd love to make is a hamburger bun similar to that from In-n-Out Burger. After reflecting carefully on what makes an In-n-Out Burger so good, I have decided that the bun is a major differentiator, and furthermore, one simply cannot buy hamburger buns as good in the store. (Why is it that it's so hard to get a good hamburger bun, anyway?). In-N-Out claims that their hamburger buns are made from a "sponge" type recipe, but my expertise runs more to making crusty chewy bread than soft cakey hamburger bun type bread. Any experts?
