Looking for: breakfast in Staten Island

Will be doing the usual Long Island to [everything else] drive in a bit, and i was thinking of stopping off in Staten Island for breakfast.

This'll basically mean a drive along 278 (Verrazano to Goethals), though a drive down 440 to the Outerbridge Crossing would work, if there was a call for it. I'm basically looking for a stop that isn't too far off either route--that is, it doesn't merely have to be a mile or two, but I don't want to add twenty minutes there and then twenty minutes back to the highway.

Basically, I'm looking for a place that does very good omelettes or frittatas, especially creative ones. I'm NOT looking for muffins or pastries or pancakes or waffles or the like, nor the take-out Egg on a Roll sort of thing. Good coffee a big plus.

Any ideas?
