I live in a small city which has many places that only bake bread, and do it quite well.
NONE of these places are entirely tidey, however, while in my favorite place today picking up a small load, i saw a mouse run across the floor in the back room.
Now i KNOW almost all bread "factories" have mice, but that doesn't mean i want to see them! I think i even read once where a certain amount of "rat droppings" in the bread is acceptable by health standards. Would you continue to go back to this place, or would you try to "fool yourself" by going to another (slightly inferior) place for your bread?
Along the same lines, do you think (almost) all kitchens in a city have some sort of problem with mice, roaches, etc.
