Where's the boudin?

slowcoooked | Dec 12, 2014 07:32 AM

I am a relative newcomer to Boudin sausage in any of its forms links, balls, or stuffing, but I've been making a point to try it wherever it's offered. So far the best I've had are two versions (1) the one hot from the smoker at Smokey Denmark's Trailer on East 5th that they've been operating for about a year. 3 bucks a link of naturally cased goodness with a nice little kick. absolutely delicious. Delicate even. (2) The one that drips of red oil when you break the casing at The Best Stop, in Scott Louisiana. I still need to try Stuffed's version, but a bunch of their products are overly salted for this palate. Smokey's is well seasoned without being overly salted. Much appreciated. Any other favorites I'd love to hear about. I hear there's some new cajun place up in the Cedar Park / Leander area with good reviews but I've not been or read anything here.
