As a followup to some earlier discussions about consistency in barbecue, I had dinner at Bone Lick Park 3 weeks ago and again this weekend, and had two completely different experiences.
I ordered ribs both times and they were worlds apart. The first visit the ribs were wonderfully cooked - smokey, flavorful, and very tender, easily the best I've had in New York. This weekend, the meat was dry, charred all over, and fell off the bone in one chewy piece.
'Course the restaurant is still new, and they may be working out kinks.
