Oh yay! Found bags of black beans in London! (Very hard to find here). Now am getting excited for cooking. First up: Black Bean Enchilada Pie - same fixings as enchiladas, beans, spicy tomato sauce, corn tortillas, cheese, but you layer it all in a casserole dish and it bubbles together into a spicy, cheesy beany layered dish - YUM! And fab as leftovers.
Now, what next. Cuban black beans? Brazilian style? Black bean soup? Something else (e.g. shrimp or pork) served with black beans? What would you do if you were black bean deprived and finally got a shipment?
