Not a jaw breaking brick textured dough. This one is almondy, tender and chewy, more along the lines of an amaretti, except that there's also textural contrast with the crunchy brittle edges. It's easy to tell that it's good, the irregular edges reflect a hand cut history, a home made beginning.

While you're there, pick up one of their donut-like things (not it's not a donut, but I can't remember the name), a soft wispy dough shell filled with amaretto-laced cream.
