Birthday cake for a crowd: Success!

Miri1 | Feb 6, 201111:47 AM

Last night was my friend's birthday party and, as I posted earlier this week, I was in charge of the cake. I wanted it to be special, since he's special to me, and I wanted it to be non-fussy because I didn't want to be exhausted by party time. I read dozens of recipes and thought about how I was going to manage to decorate a large cake. In the end, here's what I did.

I made a couple of batches of cupcakes. I have a pan that bakes 24 at a time so I baked a pan each of chocolate and vanilla. Then, because I simply had to fuss * a little * I piped in cream filling, and then frosted each one, put them all on a platter, pushed them together and slicked on a last later or frosting. I simply wrote Happy Birthday Jeff and then piped dots of icing all over the top. It was cute and no knife was required. It was a pull-apart cake! It was easy and delicious and people got a kick outof pulling off their own cupcake.

I'm going to do this for another friend in April and then again in June.
