The Rocket Bakery in Spokane has a big pink frosted sugar cookie that is raved about locally and beyond. I've seen this type of cookie elsewhere, so I don't think they originated it, but I really don't get what the fuss is about. It's basically a large sugar cookie, more crumbly than soft and the frosting is just a plain sugar frosting dyed pink. When I eat pink frosting, I want it to taste like strawberry or cherry, and not just dyed for the sake of being pink. Why do people love this cookie so much?
