Beef Tendon

Does anyone out there have any experience with cooking beef tendon? I am making Pho for supper on this cold snowy night and a Vietnamese friend told me I must have beef tendon in it, and she always does use it in hers and it is delicious. I've got the stuff but I'm not sure how long it needs to cook in the stock before it is edible.
