I ventured into an unfamiliar Hispanic market in Long Beach (CA) last night and while perusing the meat section, came across beef lips. If you've never seen these (I hadn't), imagine a giant red cat's tongue. Or a stumpy, flat sea anemone.
Now that offal is all the rage, I thought I'd look for a recipe. Not planning to make my own hot dogs and couldn't find a thing on the web. Anyone know what people do with beef lips?
There were all kinds of other animal parts, so I'm going back soon.
