bar/snack/dinner crawls in lower Manhattan/Village

Hi there,
I'm visiting from Toronto Dec 29-Jan 2. I have a few dinner reservations and I'm looking for bars in the areas of our dinners (or up to 15 minute walk away). We're a 30-something couple who likes craft beer, funky wine and good cocktails. We don't mind hipsters and we don't mind yuppies, but we like good service and love good bartenders.

Monday Dec 29 we have an 8pm at ABC Cocina. I'm thinking Booker and Dax and Terroir EVIL before, and Gramercy Tavern afterward? Does this make sense? We'll be coming on the L from Williamsburg.

Tuesday Dec 30 we have a 6:30pm at Estela and an 8pm at Pearl and Ash. Is this too much? I also really want to hit Nomad for earlier drinks and some combination of Death & Co or Nitecap after. Is this all doable in one night?

Let me know the spots I'm missing or alternative routes!
