Help with bakeware!!!

I found this great recipe for french baguettes on Food Wishes and the bread comes out amazing- my issue is, the bread sticks to the bottom of the cookie sheet.
In the video he uses a silicon mat, but I've not found one that's rated for anything over 450 degrees while the recipe calls for 15 minutes at 550- even my non stick cookie sheet is only rated to 450!! Is it safe to use the silicon? Other solutions for sticking bread? Was told to use some oil on the pan, but the bread sits on a smattering of corn meal and I don't know what that wold do to it...
