Bahn Mi, Bakery, why don't we have these places in NYC?

I just returned from the "garden spot" known as Atlanta. In fact I think Atlanta has one thing over NY, the Viet sandwich/take away places.If you ride up Buford Highway there are at least 4-5 Bahn Mi places. But..they are also a sort of Vietnamese deli. They will usually have 10-15 different types of dishes all shrink wrapped and ready to go, great beef jerky, Vietnamese Pates (the rolls wrapped in tin foil)and some of them are actual bakeries (Bah Le which just reopened and is my fave). Also, in any city or decent sized town in France there will be at least 1 Vietnamese Traiteur (take away deli). These are more refined than the Atlanta places, but not fancy or exceptional. Imagine getting off the suway and having the option of 10-15 Viet dishes ready to go. Now I'm not one for preprepared food, but these places are better than the take away joints in my 'hood (Upper West/Saigon Grill). Everytime I walk by a busy corner on Broadway I dream that there is a decent Viet Traiteur where they recognize me. Oh wo is me.
