I've seen a ton of recipes lately for brownies, cookies, and cakes that substitute avocado for the fats. (I was kind of surprised that my search didn't turn up anything on the subject here.) Has anyone tried any of these recipes? What about similar uses for black beans or beets? What is your reason for making these substitutions?
