Hey Hounds, You all were awesome helping me pursue the opening of an authentic Puerto Rican/Caribbean-Hispanic pig roast facility -- called a lechonera, so here you GO!
Nuestras Raices Farm, 24 Jones Ferry Road, Holyoke
12-6pm Fall Family Festival, modest gate fee $7, cash
5 pigs, chicken, traditional sides, family farm fun, music
PITMASTER: Luis Aponte, who, according to locals "Does lechon right!"
Crispy skin, fat pad melts, meat is tender and moist, salty/garlicky.
Pigs are prepped Friday noon-6. Marinate overnight. Start charcoal at 3:30am in the pits, pigs go on at 4am.

Bad for pigs. Good for Chowhounds. Thanks guys, hope you can come!
