either Chinese, Japanese, Viet, Thai, whatever...
the best ones I usually go to are;
Cameron Chinese Restaurant on Cameron/King St. in near downtown Kitchener. Best quality northern style dim sum, bit pricey though, but not enough variety compared to Toronto of course.
Bien Thanh Viet Thai on Pinebush/Hwy24 (Hespeler Rd) in Cambridge (used to be on King St. Kitchener), probably the best Vietnamese restaurant anywhere (even compared to Toronto), good pricey, quality, but service is below average most of the time though.
Yuen Woo Tavern on Weber St in Kitchener. They serve dim sum with the traditional cartes, cheaper than Cameron, and a little more variety and southern style (which I prefer), but quality isn't ass good. But they have the best chilli sauce.
Timeless Cafe on Phillip/University plaza near University of Waterloo. Best Bubble Tea flavour quality in the area and even compared to T.O. but there is like no Tea in it? I like strong tea, so some points off there. Food is below average though for most dishes. I believe they changed owners recently, with a new decor and new name maybe? Haven't been there in over a month so...
