I love Korean, Thai, and the foods of some regions of China, as well as shopping in local markets for the ingredients. As much as I love trying to replicate the foods at home, knowledge from a local would really help speed the process along (especially as to some of the more mysterious dried ingredients).
Does anyone know of a place, either in the outer boroughs or in Manhattan, to take a class on authentic cooking? Or is there an individual who gives instructions?
In a city where I used to live, a chef from a well-known Szechuan restaurant used to have a two part class. We first toured several markets with him, where he showed us the ingredients and how to pick them. As the next class, we cooked. Anything similar in New York?
