I had a pretty good meal at Aqua Grill the other night. The bass with risotto was very good. I dig the tuna carpaccio starter, but the waitress, who was perfectly nice, kept pushing us to order the Toro Tartar. It happens to be $14 while the tuna is around $10. She also kept mentioning the crab. I thanked her and explained that I prefer the leaner "maguro" (Japanese for tuna) versus the richer, fattier toro or belly portion of the tuna. It was obvious to me and my companions she'd been prompted to push the more expensive stuff, especially the crab. It would also have the effect of driving up her tip. After we'd all ordered, she once again came back to, "and any orders of the crab?".
