More advice needed on liquid/soft food diets

A family member of mine is currently on a liquid/super soft food diet (due to a tear in his intestines), for the next year (yes, I said year). He's on a liquid nutritional supplement via a PICC line. So, nutrition it's self isn't necessarily an issue. And I've been reading up on several of the liquid and soft food diet forum posts here, but many of the recipes or advice listed are things we've tried (soft scrambled eggs are a favorite, various broths/soups, pureed vegetables, and meal shakes). Some that have worked and some he simply is reluctant to try (he's very much a "meat and potatoes" kinda guy). I was just wondering if anyone had any more advice/possible websites to visit, or recipes to recommend? I'd love to be able to find a way to create or prepare some sort of meat protein to be soft enough, yet still palatable. Thanks so much for your help.
