Advice for once in lifetime trip

My husband, teenaged daughter and I are making a once in a lifetime trip to the southwest and could use advice on places to eat along our journey. Don't care about costs, and no suit and tie places, just looking for places to eat along the road or where we are resting our heads. Much thanks in advance.

We'll be there in August when it is unbearably hot.

Day1: Arrive Phoenix, quick lunch but where?? Get rental car from PHX, pick up rolls, sandwich fixings to bring to Grand Canyon south rim... Will pack food in a cooler with ice, to eat picnic dinner while watching the sunset at Grand Canyon....Where should we stop for those fixings... Tusayan???

Day 2: Staying at the south rim, plan on making dinner reservations at El Tovar. Not sure about other meals, may eat from cooler breakfast and lunch.

Day3: Adios Grand Canyon and drive to Mexican Hat, Utah, taking in Monument Valley along the way... Lunch?? San Juan Inn for dinner?

Day4: Driving to Cortez, Co... Meal suggestions?

Day5: Driving from Cortex to Durango (via Mesa Verde), Meals?

Day 6: Durango to Holbrook, Az, staying at Wigwam Motel. Meals? Indian dancing?

Day 7: Holbrook to Scottsdale: Leaving Holbrook very early because have a spa day planned at the Fairmont Scottsdale Princess. Staying there one night, need a dinner suggestion as do not like the sound of the Fairmont restaurants. This will be our last dinner of the trip so somwhere special/casual is welcome.
