Advice on garnishing trays for everyday food

We just came back from a cruise and every time I fall in love with the intricately carved fruit and veggies. Went to a couple of cooking classes that featured recipes I already knew how to make (veal piccata, tiramisu), but the one that really intrigued me was the garnishing class where the chef demonstrated how to carve melons, make roses out of rutabagas, etc. I would love to learn how to do this as we entertain quite a bit and would love to spruce up my "company" buffet trays with smoked salmon roses, flowers, etc. Any advice from anyone? Tools I need? Books/DVDs to buy? Thanks!
